Top chef to head R&D for Compass Group Inflight – 13/07/2004

Former chef Jean Michel Fort joins the R&D Department at Compass Group’s In-flight Spanish HQ.


SPAIN. Jean Michel Fort has joined the Research and Development (R&D) department at Compass Group’s Inflight headquarters in Palma de Mallorca, Spain. He reports to Executive Vice-President Commercial & Development Phillipe Chavaroc.

Fort’s new role requires him to find new and innovative products in all markets relating to inflight catering for various Compass divisions such as the Eurest Inflight Services/Catering Aerien (traditional catering), Air CPU (hot meal production), gusto+ (retail and onboard sale) and Inflight Logistics Company (supply chain monitoring).

Fort, 35, obtained his degree as chef and chief cook at Toulouse and Thonon-les-Bains schools. He gained his professional experience serving traditional cuisine at several top class restaurants in France, such as Les Jardins de L’Opera in Toulouse, Chateau de Mecues in Cahors and Les Elysées du Vernet in Paris.

His biggest accomplishment in the industry is “to have acquired the experience in all sectors across catering from traditional cuisine to onboard services”.

Fort joined Catering Aerien, a member of Compass Group, five years ago as Production Manager. He managed the whole production cycle from purchasing of goods to delivery to aircraft.

He told The Moodie Report: “Working in the kitchen gives you the experience of actually making the goods, of attending to the customer’s needs and fulfilling their expectations. Working for R&D gives you the possibility of anticipating the customer’s needs by using the acquired knowledge and providing the customer with innovative ideas.”
