Earth, water, air and fire: Thierry Marx creates “culinary emotions” at Paris-Charles de Gaulle restaurant

FRANCE. Celebrity chef Thierry Marx has opened a new restaurant at Paris-Charles de Gaulle Airport in association with Relay@ADP (a partnership between Lagardère Travel Retail France and Groupe ADP).

The fast casual Teppan is located in Terminal 1, public area level 2.

Teppan features table service and a bar. The restaurant offers dishes prepared on a teppanyaki grill. Marx describes it as “a precision tool that gives full control over temperature levels and allows fast preparation while enhancing the products’ flavours”.

“The cuisine at Teppan aims at creating a culinary emotion showcasing the best local products, adding three touches and seasoning inspired by my travels,” said Marx. “The four fundamental elements are intimately linked. Earth, which bears the ingredients; water, which feeds them and keeps them alive; air, which makes the dough rise; and fire, which makes them come to life.”

Lagardère Travel Retail France Chief Operating Officer Matthieu Mercier commented: “This project would never have seen the light of day hadn’t there been a mutual willingness by Groupe ADP to develop French gastronomy in its airports and our group’s capacity to make it happen. This is how this unique and very welcoming restaurant came to life.

“Thierry Marx’s love of local products, his creativity and his know-how give its full meaning to this beautiful project and enables visitors to rediscover the French terroir.”

Groupe ADP Customer Director Mathieu Daubert added: “The opening of Teppan and the arrival of Michelin-starred chef Thierry Marx at Paris-Charles de Gaulle airport are a testimony of the rising standards in our restaurant offer. Today Paris is recognised as the world’s culinary capital. Through its airports, Paris is the city with the most stories to tell and the most new sensations to offer.”

Teppan’s menu is described by the partners as “a mix of tradition and innovation”. It includes items such as salmon in a Japanese-style marinade, tataki-style rib steak, calamari with fresh herbs, and roasted spiced pineapple.

The restaurant is open seven days a week, from 6am to 10pm.
