Hamburg Airport launches tender for four food & beverage locations

GERMANY. Hamburg Airport has launched an international tender process for four food & beverage locations in two packages. Three of the locations are airside and one is in landside space open to the public. Contracts are due to begin on 1 April 2024.

The airport company said it places “great value on a diverse food & beverage offering. A wide range of different concepts are therefore sought, ranging from burgers to bowls and from bistro to restaurant.”

“We are looking forward to fresh concepts to make the food & beverage range at the airport even more diverse. It is very important to us that every passenger is guaranteed to find something to their taste, whether they are looking for a take-away snack before departure or a relaxed, sit-down meal,” said Hamburg Airport Head of Center Management Lutz Deubel.

The first lot is for a 100sq m site on Level 2 of the Airport Plaza (security-controlled area), and is currently home to a burger restaurant. “Ideally, we want a well-known operator with a diverse range of products for everyone, from classic burgers to vegan alternatives. A varying range, adapted to the time of day, would also be of interest, so that our passengers could also get their breakfast there in the mornings,” said Deubel.

The second lot is for the following three locations:

  • A 320sq m space in Terminal 1, Level 3 (publicly accessible area)
  • A 100sq m space in the Airport Plaza, Level 2 (security-controlled area)
  • A 230 sq m space in the Passenger Pier adjacent to Gate A17 (security-controlled area)

There are no fixed requirements for the first site in Terminal 1, with the airport company open to proposals. For the second site, in the Airport Plaza, a healthy Asian food concept is sought, and should serve dishes such as bowls and curries but not sushi. For the pier site, a three-part concept is anticipated. The popular bistro concept should remain; travellers can order for takeaway or eat-in directly at the counter while those with more time can use the à la carte table service – not currently available at the airport.

Hamburg Airport is northern Germany’s largest airport and the fifth-largest nationwide. It served 11.1 million passengers in 2022, compared to more than 17 million passengers in 2019. The 15 restaurants and cafés at the airport today offer a rich variety of food from sushi, noodles and bread rolls and formats including a buffet service.

Submissions of suitability application may be submitted via the TED tendering platform until 5 June.
