USA. Airport hospitality company Mission Yogurt has opened a three-venue food & beverage marketplace in Denver International Airport Concourse A. The Bindery, Maria Empanada and Uncle are all locally grown brands.
The marketplace concept leverages Colorado natural light with large floor to ceiling windows overlooking the airfield.

The Bindery – set in 261.5sq m with 134 seats – offers a diverse menu featuring dishes such as chestnut honey and thyme baby back ribs, and Cajun shrimp and grits. A wide selection of pastries is also available.

The venue has a substantial wine menu, with a display of fine wines central to its design. It also hosts Denver Airport’s first oyster bar.

The 111sq m, 23-seat Maria Empanada offers authentic Argentinian empanadas, both sweet and savoury varieties, and a full espresso bar.
Uncle (84.5sq m, 33 seats) is a specialist in ramen dishes, alongside other Japanese-inspired food choices.

Each venue has a grab and go counter.
Denver Airport noted all three concepts reflect their street-side location designs and play off each other with contemporary vibes and warm wood tones.
Denver Airport Senior Vice President of Concessions Pam Dechant told The Moodie Davitt Report: “Opening Maria Empanada, Uncle and The Bindery supports DEN’s strategic plan, Vision 100, by growing the airport’s infrastructure to drive non-aeronautical revenue, while greatly enhancing the passenger experience.
“DEN is quickly becoming known as a foodie’s paradise. We’re proud of our partnership with Mission Yogurt and the team’s work to bring three original, local Denver favourites to our airport.”
