The Mercurius Group releases Australia and New Zealand Airport Food & Beverage Study

AUSTRALASIA. The Mercurius Group has released its latest Airport Food & Beverage Study (AFABS) covering the Australia and New Zealand markets. It examines F&B programmes at 27 airports throughout the region, as well as ranking the Top 12 F&B players by sales and assessing the brands shaping the market.

The Study is designed as a tool for airports, operators, brands, investors and service providers working in the Australia and New Zealand airport F&B space.

The Mercurius Group highlighted the market as a “rapidly evolving space of continued innovation and sustained growth, with changing market trends and many terminal expansions and developments under way.

Mercurius Managing Director Ivo Favotto explained: “There are a number of airports that have either recently completed or are currently redeveloping their F&B programmes in the ANZ region. This includes new terminals, terminal expansions and reconfigurations. There are also multiple projects slated to happen in the coming years. This will open-up significant development opportunities for F&B operators, designers and shopfitters.”

Addressing how airports can grow their F&B yield, Favotto added: “When we examined what has contributed to getting F&B sales back on track, we found several surprising and encouraging signs. If airports and operators can maintain their momentum, we expect the next couple of years to be some of the most exciting the industry has seen. There is potential for the industry to crack a very significant milestone – A$1 billion (US$667 million) in sales.”

The inaugural edition of the study was released in 2021. With the 2024 edition, Mercurius said it has expanded the depth of insights provided and added several new features.

Along with detailed quantification of industry performance measures (including turnover and passenger-spend-rate), Top 12 operator rankings and an airport-by-airport analysis of F&B programmes, the 2024 edition offers a forward outlook for the industry. This includes a forecast for the sector’s potential over the next two years, as well as details of current and upcoming F&B terminal developments across multiple airports. The report also examines the potential for further consolidation and merger and acquisition activity.
