UK. TRG Concessions (TRGC) has appointed Michele Bacon as the new Central Operations Director for its Concessions and Barburrito divisions.
She joins from Côte Restaurants, where she worked as Head of Central Operations for more than five years. The company runs a 75-venue UK restaurant chain under the name Côte Brasserie across the UK.

Bacon’s strong background in the casual-dining sector is underlined by senior operations roles for the likes of Carluccios, Giraffe World Kitchen and Pizza Express earlier in her career.
Her wide-ranging brief with TRG will see her take responsibility for operations functions across its airport and rail station food & beverage estate.

Bacon’s role also includes responsibility for TRGC’s 13-restaurant Barburrito chain, which offers Mexican cuisine. The portfolio includes venues at Edinburgh and Manchester airports.
TRG Concessions CEO Jon Knight said: “We are delighted to welcome Michele to the team and are looking forward to working with her and taking benefit from her experience as an operator both in restaurants and in the support centre. Michele has achieved great things in her previous roles, and we can’t wait for her to be part of TRGC’s ambitious growth plans over the next few years.”
Bacon commented: “I am absolutely delighted to be joining such a dynamic and growing business. TRGC and Barburrito already have a strong portfolio and I am excited to be able to share in the journey they are on of rapid expansion into more locations while continuing to deliver growth in the current estate.”
