INDIA. Kreol Travel Retail has launched Courtyard by Marriott Kochi’s Christmas Cake at Cochin International Airport with Cochin Duty Free.
The festive cake, rooted in Kerala’s culinary heritage, is a traditional plum cake crafted by Courtyard by Marriott Cochin Airport Hotel’s Executive Chef Deepu Mohan.
The cake celebrates the region’s age-old tradition of early cake mixing with kilograms of dried fruits, nuts, grains and spices.
The mixture is soaked in alcoholic blends for several days to enrich the taste and fragrance, and folded into the cake batter to bake the festive Christmas Fruit Cakes.
A recommended holiday gift, the 900-gram Christmas cake is presented in an artisan-designed tin and available in two varieties – alcoholic and non-alcoholic.
Inspired by Kerala’s traditional recipes, the cake is packed with dry fruits and nuts, offering a local taste.
