SOUTH AMERICA. Lagardère Travel Retail will manage an expansive food court at Jorge Chávez International Airport’s new terminal in Lima set to open in early 2025.
This follows the company’s proposal for a blend of 11 international and South American eateries being approved by Lima Airport Partners.
Just two years after taking its first steps in Peru with the opening of several Aelia Duty Free stores, the French company’s new food hall will cover 3,300sq m under the brand name ‘Nación Sazón’ which means ‘The Land of Flavours’ or ‘The Land of Seasonings’ in Spanish.

The aim is to offer travellers a true sense of Peru’s vibrant gastronomic heritage, using local top chefs to offer world-famous dishes such as ceviche (cured fish platters) while also providing plenty of healthy grab-and-go, coffee and comfort food choices.
To leverage Peru’s culinary recognition on the international stage, Lagardère Travel Retail’s team in Latin America has forged key partnerships with some of South America’s best cooks. They include Mitsuharu Tsumaru, Chef at Maido, ranked 6th in the ‘50 Best World Restaurants’ list, and Jaime Pesaque, Chef at Mayta, which is ranked 47th in the ‘50 Best World Restaurants’ list.
Lagardère Travel Retail Peru CEO Cyril Letocart, said, “This new contract with Lima Airport Partners (LAP) confirms our willingness to invest in Peru and in the region. Together with LAP and the most famous Peruvian chefs, we want to create the best culinary experience in an airport in the region.
“Our aim is to transform Lima Airport into a gastronomic hub: travellers passing through Lima Airport will have the opportunity to discover, or to enjoy one last time, the flavours of this wonderful country,”

The chef concepts featured in the new F&B line-up will include:
- Mitsuharu Tsumura: A fusion of the chef’s native Japanese cuisine and items from his existing BBQ chicken chain, Tori Polleria. Diners will be able to choose from classic sushi, chicken dishes and teriyakis, all with a Peruvian twist.
- Jaime Pesaque: This chef’s new seafood concept (pictured below) will bring travellers a taste of Callao, a neighbourhood known for its fishing port and famous for dishes such as potatoes with crispy squid and quail’s eggs or grilled octopus with baby corn.
- Las Reyes by Isolina: A sister concept to Chef Josè del Castillo’s well-known downtown Lima restaurant Isolina, focusing on Creole cuisine such as gumbo, pisco sours and beef stews.
- Javier Miyasato: The creative chef behind the ‘Burger Boy’ chain and the winner of Peru’s Best Burger award will bring his twist on deluxe fast food to the airport.
- KO: An innovative Asian fusion concept from the renowned Peruvian gastronomic group MCK. It will blend fusion flavours from various countries across the continent in shareable small plates.
- La Lucha: A rising star in Peruvian sandwich culture, this fun concept offers innovative sandwiches, such as the popular ‘chicharron’, which is made with slow-cooked fried pork.
- Pan Sal Aire: Crafted by Chef Jeronimo Aliagas, this concept meaning ‘Bread, Salt, Air’ revolves around sourdough bakes from bread to pizza and pastries.
- Puku Puku: A socially and environmentally responsible Peruvian coffee brand that unites local coffee producers in a common Fairtrade cause.

In addition to these external partnerships, the Lagardère team will introduce some of its existing concepts such as Natoo – a healthy grab-and-go shop – and So Coffee. The offer will be rounded off with local dining options such as Wok to Gate, a Peruvian ‘chifa’ cuisine concept, influenced by the early 20th-century Chinese community in Peru.
Architects and designers including Altavia Group (Foodhall), Peruvian firms Arquitekturas and 51-1, and Grunwald from Chile will spearhead the design.
