USA. Salt Lake City International Airport has announced the 23 food & beverage concepts that will open upon completion of the first phase of its US$3.6 billion redevelopment programme in 2020.
A new terminal, dubbed The New SLC, will replace the airport’s three existing terminals in the third quarter of next year. The first wave of retail stores to feature was announced in December.

There will be approximately 46,734sq ft of space allocated to F&B in the first phase, with 28,406sq ft added in the second phase (which is scheduled for completion in 2024). As with the retail component of The New SLC, the airport is planning ‘street pricing’ for the food & beverage concepts. This means passengers will pay the same price charged at the store locations outside of the airport.
The airport aimed to showcase local favourites alongside national and international brands, and concepts from HMSHost, SSP America, Cafe Rio, LaTrelles, OHM, Salt Lake Brewing Company and The Grove will feature. See table below for the complete list, and locations.

Global restaurateur HMSHost was awarded a 10-year contract to deliver 12 dining locations at Salt Lake City International. The contract is valued at approximately US$418 million.
HMSHost’s planned locations fall under various joint venture arrangements established with emerging travel dining companies and Utah-based small businesses.
Its openings will include Shake Shack, described as a modern day ‘roadside’ burger stand known for its 100% all-natural Angus beef burgers, chicken sandwiches and griddled flat-top dogs, among other menu items.
Bakery-café brand Panera Bread (pictured above) offers made-to-order breakfast, lunch and dinner items. Salt Lake City favourite Pizzeria Limone (pictured below) is known for its Neapolitan pizzas, which are baked in custom-designed open-fire turntable ovens in three-and-a-half minutes.
Contemporary US brasserie White Horse Spirits and Kitchen will be the second location of the original Main Street Salt Lake City ‘hot-spot’ establishment. The new airport location will highlight local ingredients on an eclectic menu, with a selection of spirits, draft ciders, local brews on tap, and premium wines.
Salt Lake City seafood restaurant Market Street Grill (pictured below), which opened in 1980, is also coming to the new terminal. A Market Street outlet is currently located in the existing Terminal 2. The restaurant prides itself on only partnering with sustainable suppliers.
Fast casual gourmet burger concept Smashburger will open in Concourse B. It is known for its cooking process: every burger is “smashed” on the grill and seared to seal in the juices, then topped with garden-fresh ingredients and served with signature Smashfries.
National brand California Pizza Kitchen will bring trending menu items such as the cauliflower pizza crust to its Salt Lake City International location.
Bruges Belgian Bistro is based on Salt Lake City favourite Bruges Waffles & Frites, which started selling traditional Liège waffles, popular in Belgium, on Salt Lake City’s Main Street from a vending cart in 2004. It has since expanded to several trucks and traditional locations. Dessert items include the popular ‘Waffle Monster’ or the healthy-option ‘Machine Gun Sandwich’, which was featured on Food Network’s Man v Food television show. It is a toasted baguette stuffed with a secret lamb sausage, frites and Andalouse sauce.
SLC Life Market Featuring Creminelli Meats (pictured above) is a grab and go concept offering freshly prepared sandwiches and salads, along with a selection of small bites and snacks to take onboard. Popular local food purveyors such as Cakes de Fleur, a private Salt Lake City bakery that specialises in creating high-quality cakes from scratch, will also feature.
HMSHost will also open three Starbucks Coffee outlets; two in Concourse A/Terminal Plaza and one pre-security.
