GERMANY. Allresto Flughafen München Hotel und Gaststätten (Allresto) recently opened a second location for local healthy eating brand dean&david at Munich Airport. Allresto CEO Andreas Reichert spoke to our Senior Business Editor Mark Lane about the latest addition to the bustling ‘Viktualienmarkt’ food court at the airport.
“dean&david’s commitment to sustainability, responsible sourcing and offering vegan and vegetarian options aligns perfectly with the overall trends we see on the demand side. Their philosophy of creating food that not only tastes good but also feels good, with minimal environmental impact, fits well with our mission to bring quality dining options to Munich Airport.”
This was the reply of Allresto CEO Andreas Reichert when assessing the decision to introduce a second airport location for Munich brand dean&david in the Viktualienmarkt food court, lining up alongside spaces for Viennese coffee house and pastry shop Aïda and Bavarian foods specialist Subralott.
Reichert plays a key role in F&B strategy at Munich Airport leading Allresto, the airport’s number one hospitality partner since 1978 and operator of approximately 90% of F&B outlets across terminals 1 and 2, and the Satellite Terminal.

The Allresto business spans from airport restaurants, event catering, conference facilities and staff canteens to delivering F&B at the Munich Airport Hilton Hotel. A recent addition to its portfolio is a destination restaurant at the new 02 Surftown MUC in Hallbergmoos, located very close to the airport.
The F&B company, a wholly owned subsidiary of Munich Airport, is deeply rooted in its local market, collaborating with local brands such as dean&david and also international brands to meet passengers’ tastes.
“Our partnership with dean&david for Munich Airport grew out of a shared vision to offer passengers fresh, healthy food options while travelling,” says Reichert. “We saw the opportunity to collaborate with a brand that is known for redefining fast food with sustainability and wellness at its core.

“Given the global nature of airport traffic, we felt that dean&david’s fresh and natural offerings would resonate well with the international and health-conscious passengers passing through Munich Airport.”
This is dean&david’s second location with Allresto at the airport, occupying a 19sq m space with several counter seats in the Viktualienmarkt, one of the busiest food & beverage areas in T2, and home to a large communal seating area.
“Viktualienmarkt is known for offering high-quality snacks and delicacies at various market stalls, either for immediate consumption or takeaway. It is an ideal location due to the central position in the terminal, attracting both European and international passengers that have come from further afield. It is a popular destination for travellers seeking fresh, healthy and quick meal options.

“The three brands we showcase at Viktualienmarkt dovetail nicely. Aïda is a great Viennese specialty coffee and desserts shop; Subralott has a great food offer using the best Bavarian produce; and dean&david brings fresh meal choices to health-conscious passengers.”
The dean&david food menu includes signature bowls, such as the Buddha Bulgur Bowl with fresh vegetables, as well as wraps, salads, sandwiches and soups. The drinks offer features fresh juices and smoothies, made fresh daily.
Reichert says early sales at the concession have been “very promising, showing that travellers are embracing the healthy and fresh food options”.

“The feedback has been positive,” he adds, “with many customers praising the quality of the ingredients and the sustainable philosophy behind the brand.”
Dean&david’s neighbour at Viktualienmarkt is the Aïda franchise, which, as reported, Allresto launched earlier this summer. Asked if it has so far met expectations in terms of customer reaction and sales, Reichert replies: “The combination of high-quality coffee and traditional Viennese pastries, such as the famous Aïda Cremeschnitte, continues to attract a steadily growing customer base.
“Our feedback shows that travellers and visitors really appreciate the opportunity to immerse themselves in classic Viennese coffee house culture and indulge in excellent coffee specialties, such as the Aïda Melange, and, of course, the many delicious cake varieties.
“The location perfectly complements our diverse food & beverage offerings at Munich Airport, providing a charming culinary escape for our international guests.”
