Salt Lake City Airport reveals final 12 F&B and retail concessions in fourth redevelopment phase

USA. Salt Lake City International Airport has revealed details of the final 12 restaurants and retail shops selected for The New SLC Phase 4, the latest stage in the travel hub’s U$S4.1 billion redevelopment.

Commercial space of 20,723sq ft – featuring seven food & beverage venues and five retail stores – will be operated by Hudson by Avolta, At SLC Concessions JV, OHM Concession Group, Paradies Lagardère, SSP America and Tugals.

The first openings will be in autumn 2025, with the remainder debuting across 2026.

The new concessions include eight local brands in the form of F&B venues Aubergine Kitchen, Moab Brewery, Monarca, Moochie’s Meatballs and More, Mr. Charlie’s Chicken Fingers and Swig; and retail stores Art of Aesthetics and Good Earth Markets.

Salt Lake City Department of Airports (SLCDA) Executive Director Bill Wyatt said: “The new airport is continually recognised as having one of the best concession programmes in the country, which we have worked hard to achieve. Keeping with the theme of The New SLC, many of the brands and concepts selected are Utah-based to highlight the unique flavour of the state.”

When selecting the concessions for Phase 4, SLCDA noted it looked for a mix of local, regional and national brands, while taking into consideration pricing, hours of operation, service standards and street pricing.

Requirements for the seven food & beverage locations included two full-service restaurants with alcohol service, and five quick-serve restaurants. In addition, five specialty retail and news/gift locations were part of the Phase 4 concessions mix.

Many of the businesses selected for Phase 4 are ACDBE-certified (Airport Concessions Disadvantaged Business Enterprise).

Food & Beverage

Aubergine Kitchen: A local business founded in 2014 by a husband and wife duo from Brazil. The restaurant focuses on healthy, minimally processed foods that cater to a variety of dietary preferences. The menu features acai bowls, bakery items, salads and smoothies.

Einstein Bros. Bagels: A national brand with 22 locations in Utah. The menu features bagel sandwiches for breakfast, lunch and dinner along with a complete coffee menu, including cold brew and espresso drinks.

Moab Brewery: A Utah business established in 1996. The brewery is known for its craft beers and a successful family-friendly dining venue in Moab, Utah.

Monarca: A full-service Mexican restaurant founded in 2021 by a husband and wife duo who also own and operate Santo Taco in Salt Lake City. The menu focuses on made-from-scratch dishes using fresh ingredients.

Fast food options from local brands Swig (above) and Moochie’s Meatballs and More (below) will soon be available at the airport

Moochie’s Meatballs and More: A Utah business established in 2003 with three locations in the Salt Lake City area. The menu features Philly cheesesteaks and meatball sandwiches.

Mr. Charlie’s Chicken Fingers: A local concept founded in 2018 with locations in Utah cities Draper and Murray that features southern fried chicken tenders.

Swig: A local soda shop concept founded in 2010 with about 50 locations currently operating in Utah.

Retail

&Go: A convenience store powered by Amazon Just Walk Out technology.

Art of Aesthetics: A local concept created in partnership with Dr. Mark Taylor which features medical grade skin, hair and body products along with non-invasive services.

Good Earth Markets: A local market founded in 1973 that specialises in health and wellness offering a wide array of healthy snacks, dietary supplements, beauty and personal care products, jewellery and gifts.

Hudson: A travel convenience store. The brand’s fourth location at SLC.

Utah National Parks: A unique store created in partnership with the National Parks Foundation that features Utah National Park-themed apparel and accessories. ✈
