USA. Olive & Finch Collective’s grab-and-go concept has been added to the dining mix at Denver International Airport, set to open tomorrow (29 January).
Located in Concourse A, Finch, on the Fly will serve high-quality, healthy and affordable fare, reflecting the signature style of Olive & Finch Collective Founder, President and Chef Mary Nguyen.

Nguyen said: “We’re thrilled to have a presence at the airport with Finch, on the Fly. Our mission is to bring high-quality, chef-driven food to everyone, no matter how much time or money they have.
“Finch, on the Fly will do just that, fulfilling busy traveller’s cravings for healthy, delicious food and drinks on the go.”
Finch, on the Fly offers a variety of options across breakfast, lunch and dinner, with ready-to-eat meals, burritos, sandwiches, salads, pastries, cold-pressed juices and other refreshing beverages for travellers.
As Nguyen and the Olive & Finch Collective expand the presence of their wholesale line, they are also increasing Olive & Finch’s footprint.
A new location is set to open at Denver Union Station in Q1, with another planned for the Denver Performing Arts Center in Q2.
