DENMARK. Copenhagen restaurant Noma has returned to the top spot in this year’s World’s 50 Best Restaurants list, ending a one-year hiatus after winning the award three years running from 2010 to 2012.
The restaurant, known for its innovative approach to foraging , has been in the list for nine years. It was founded in 2013 by René Redzepi (who remains owner and head chef) and Claus Meyer.
The list’s compiler Restaurant magazine praised Noma’s “highly original, sometimes visceral version” of Nordic cuisine.
Delegates at this year’s Airport Food & Beverage (FAB) Conference and Awards, to be held in Copenhagen on 9-11 June, will be granted an insight into the founding of the world’s best restaurant in an audience with local hero Meyer – now a TV personality, entrepreneur and philanthropist.
