Brooki Bakehouse enhances Brisbane Airport’s food mix with cookie vending concept

Brooki Bakehouse Founder Brooke Bellamy makes the Brisbane-born cookie brand more accessible to international travellers through a new vending concept

AUSTRALIA. Brooki Bakehouse has rolled out a cookie vending machine at Brisbane Airport International Terminal.

Located on Level 3 of the Departures Hall, the vending machine is described as a first-of-its-kind concept, offering travellers 24/7 access to a wide selection from the social media-popular cookie brand.

Flavours include Brooki Bakehouse’s bestselling Milk Choc Chip, Nutella, Red Velvet, NYC (choc chip walnut) and Salted Caramel, alongside rotating special editions. Each cookie is freshly baked and sealed in travel-ready packaging.

Brooki Bakehouse Founder Brooke Bellamy said, “Brooki Bakehouse has become a Brisbane icon, and we’re thrilled to showcase it to the world.

“Our cookies are made with ingredients we’re proud of, using the best local produce such as Queensland macadamias, Bundaberg sugar, flour from local mills and Australian butter.

“Being able to offer them to travellers at the International Terminal means visitors can get a true taste of Queensland and take a little piece of Brisbane wherever in the world they go.

“Customers are always coming into our flagship store and buying boxes of cookies to take home to family and friends. It made us realise there was a real opportunity to make Brooki cookies accessible to international travellers departing Brisbane Airport.”

Brisbane Airport Executive General Manager Commercial Scott Norris added that the launch builds on growing traveller demand for locally driven brands and flavours.

He said: “Passengers love discovering local flavours and this new vending machine delivers a bite of Brisbane in a fun and convenient way. The internet’s favourite cookies are the perfect treat for long-haul flights, last-minute gifts or a sweet farewell.”

The concept supports Brisbane Airport’s International Terminal upgrade, which includes 13 new and refurbished dining outlets to be delivered by 2027.

The International Terminal has direct connections to 35 global destinations.  ‍
