
AUSTRALIA. SSP Australia is launching The Grace Wine Bar and Eatery at Melbourne Airport’s Qantas Terminal. The opening date is yet to be announced.
The Grace Wine Bar and Eatery’s original location is at a heritage building on Main Street in Rutherglen, northeast Victoria.

The latest dining venue is in association with Chef Ray Capaldi, a widely regarded culinary professional (see profile below) . The Scotland-born chef has long been an influential figure in Melbourne’s dining scene and is renowned for his expertise in modern Australian cuisine.

The Grace Wine Bar and Eatery is described as “an expression of Melbourne” and offers carefully curated dishes and an “enchanting” ambience. ![]()
About Ray CapaldiScottish-born chef Raymond Capaldi is well-known to Melburnians for his time at the Hotel Sofitel in the late 1990s, where he established the Sofitel cooking academy. He moved to London from Scotland in 1986 to work at the Dorchester Hotel in The Terrace kitchen where two Michelin stars were awarded with Anton Mossiman.
Capaldi has enjoyed an outstanding career that has included executive roles at some of the premier fine-dining restaurants in the world. His global resume includes the five-star Gleneagles hotel in Scotland, the Park Lane Hotel Hong Kong, the British Embassy in Moscow, Hotel Martinez in Cannes and Sheraton Mirage in Port Douglas. Other key accomplishments include being named 1992 Scottish Chef of the Year, achieving 3 Chef’s Hats in The Age Good Food Guide, The Restaurant Association of UK Young Chef of the Year ’85. He represented the UK in the skilled Olympics in Osaka and achieved 4th place and was awarded a Diploma of Excellence. |
